Ingredients
- Broccoli
- 1/2 cup grated cheddar cheese
- 1/4 cup mayonnaise
- 1 egg white
- 1 teaspoon lemon juice
- Parmesan cheese
Preparation
Step 1
Separate the broccoli into flowers. Cook by the professional method, blanching them for 10 minutes
Drain the broccoli and place them into a shallow baking dish that can go under the broiler.
Combine the cheddar and the mayonnaise. Beat the egg white and fold into the cheese and mayonnaise mixture. Add the lemon juice. Spread this mixture over the broccoli and sprinkle with Parmesan cheese. Broil 6 inches from the source of heat for about 5 minutes, until the sauce puffs up and is golden.
