Ingredients

  • 2 large onions, chopped
  • 2 large shallots, chopped
  • 2 tbs EVOO
  • 2 cloves garlic, minced
  • 1 cup plain Greek yogurt
  • 1 cup light sour cream
  • 2 tbs minced fresh herbs, plus additional for topping (Italian blend, Herbs de Provence, or whatever flavor you like).
  • 3/4 tsp sea salt

Preparation

Step 1

1. Cook onions and shallots in oil in a large skillet over med low heat for 30 min or until soft and golden brown, stirring frequently. Stir in garlic.

2. Let cool completely, then stir in remaining ingredients.
Cover and chill for at least one hour.

3. Sprinkle with additional herbs, if you like. Serve with fresh vegies or chips.
