Pub Potato Salad

Ingredients

  • 1 1/2 lbs. boiling potatoes
  • 1/3 c. white onions, chopped
  • 1/2 c. English cucumber, chopped
  • 4 strips bacon, fried
  • 2 hard boiled eggs, shelled
  • 1/2 c. mayonnaise
  • salt and pepper to taste

Preparation

Step 1

in a sauce pan cover potatoes with water and boil
drain potatoes and while still hot, peel
cut potatoes into 1 1/2 in. chunks
add chopped onion, cucumber and 2 strips of bacon, crumbled, toss
chop eggs into lg. chunks and add to cucumber mix
add mayo and gently combine
add salt and pepper
place onto lg. lettuce lined platter or bowl
garnish with remaining bacon
