Spiced and Herbed Quinoa with Green Onions

Ingredients

  • 1 c quinoa
  • 2 C vegetable stock or water
  • 1/2 c cucumber, diced
  • 1/2 c tomato, diced
  • 2 T red onion, diced
  • 2 Green onions, thinly sliced
  • 2 T chopped cilantro
  • 1 t chopped jalapeno
  • 3 T olive oil
  • 1 T lemon juiced

Preparation

Step 1

Cook the quinoa according to directions, using stock or water. Let cool completely.
In a large bowl, combine the quinoa with remaining ingredients.
Toss and mix thoroughly.
Serve chilled
