Ingredients
- 2 Tbsp. Olive Oil
- 2 Sliced Garlic Cloves
- 2 tsp. Lemon Zest
- 1/2 tsp. Chili Flakes
- 1/2 lb. Cherry Tomatoes, halved
- 2 Zucchini, thinly sliced lengthwise
- 4 oz. Spaghetti
- Lemon Juice from 1 Fresh Lemon
- Fresh Basil, coarsely chopped
- Finely Grated Parmesan Cheese
- Salt & Freshly Ground Black Pepper
Preparation
Step 1
Cook spaghetti in boiling, salted water till al dente (approx 6 min.). Meanwhile, heat olive oil in skillet. Add garlic cloves, lemon zest & chili flakes; cook for 1 min. Add cherry tomatoes & zucchini slices; cook for 1 min. Add cooked, drained spaghetti, lemon juice, fresh basil, parmesan cheese, salt & pepper. Toss to combine & serve.
