Lemony Light Salad (Shirley Frazier)

Ingredients

  • 1 large pkg lemon gelatin
  • 2 cups boiling water
  • 2 cups pineapple juice
  • 2 bananas, sliced
  • 1 cup pineapple tidbits, drained
  • 3 cups mini marshmallows
  • 1 can lemon pie filling
  • 1 (8 oz) carton cool whip

Preparation

Step 1

Dissolve gelatin in boiling water. Add pineapple juice. Refrigerate until partially set. Fold in bananas, pineapple and marshmallows. Place in 9 x 13 pan. Chill until firm. Fold cool whip into pie filling. Spread over gelatin. Refrigerate 2 hours longer. Cut into squares. Can serve over lettuce .
