Carrot Cake

Ingredients

  • 3 eggs
  • 3 cups sugar
  • 3 1/2 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1 cup + 6 tablespoons oil
  • 2 1/2 teaspoon baking soda
  • 1 1/4 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 3 1/2 cups grated carrots (about 1 lb)
  • 1 can (20 oz) crushed pineapple, including juice (opt.)
  • 3 cups flour
  • 1 cup chopped nuts

Preparation

Step 1

Mix first 8 ingredients together and beat for 3 minutes. Stir in carrots, pineapple, flour and nuts. Mix well. Pour batter in pans that have been lined with parchment, greased and floured. Bake at 350 degrees until tests done. Cool in pans for 10 minutes on wire rack. Turn out of pans and cool completely. Ice with cream cheese icing.
