Ingredients
- 1 C chopped pitted dates
- 1/2 C Kahlua
- 2/3 C firmly packed brown sugar
- 2 T butter - softened
- 1 egg
- 2 C sifted flour
- 1 t baking soda
- 1 t salt
- 2/3 C chopped pecans
Preparation
Step 1
Preheat oven to 350 and grease loaf pan.
Combine dates and Kahlua and set let soak.
Beat sugar, butter, and egg together.
In separate bowl combine flour, baking soda, and salt. Alternate adding the flour mixture and the date mixture to the sugar mixture. Stir in pecans.
Pour batter into prepared pan and let rest for 5-10 minutes before baking.
Bake for 60-70 minutes or until tooth pick inserted in the center comes out clean.
Let sit for a few minutes in the pan after removing from the oven. Then take a butter knife and loosen the edges from the pan and turn out onto a wire baker's rack covering with a dry towel until completely cooled
