Pear streusel loaf

Ingredients

  • Pear mixture:
  • 2 medium pears - peeled, cored, and chopped
  • or
  • equivalent canned - drained
  • 1 t lemon juice
  • streusel:
  • 1 C flour
  • 1/2 C packed brown sugar
  • 4 oz butter or margarine cut (or 8 T soft)
  • 2 t cinnamon
  • 1/3 C chopped pecans
  • bread:
  • 2 C flour
  • 3/4 C sugar
  • 2 t baking powder
  • 1/2 t salt
  • 2 eggs
  • 1/2 C milk
  • 1 1/2 t vanilla
  • 4 oz butter melted (8 T melted)

Preparation

Step 1

Preheat oven to 350 and grease and flour a 9x5 loaf pan.

Fruit:

Chop pears into hunks and toss in lemon juice.

Streusel:

In another bowl or food processor combine all streusel ingredients except pecans and pulse or combine with a fork until crumbly. Stir in pecans.

Bread:

In mixing bowl combine flour, sugar, baking powder and salt. Blend well. Whisk eggs in a separate bowl and stir in milk, vanilla, and butter.

Combine the flour mixture with the egg mixture and fold together until all ingredients are moistened.


Spoon half the batter into prepared loaf pan spreading to cover the bottom of the pan completely. Cover the batter in the pan with half the fruit mixture and half the streusel mixture. Spread the remaining batter over the streusel in the pan. Then cover again with the pear mixture and top with remaining streusel.

Bake for 70-80 minutes or until a tooth pick inserted near the center comes back out clean.

Cool for 10 minutes in pan before taking a butter knife and loosening the edges of the bread from the pan. Turn out bread onto a wire baker's rack and leave sitting streusel side up uncovered until cool.
