Ingredients
- 1 pound chopped tomato
- 2 tablespoons fresh lime juice
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 clove garlic
- 1/2 cup peeled and diced cucumber
- 1/2 cup finely chopped green onions
- 2 tablespoons finely chopped fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 cups cooked corn kernels
- 6 cups tightly packed sliced romaine lettuce
- 1 pound cooked lobster meat, cut in bite size pieces
Preparation
Step 1
Position knife blade in food processor bowl; add ½ cup tomato, lime juice, vinegar, oil and garlic. Process until smooth. Pour mixture into a medium bowl and stir in remaining 1 ½ cups tomato, cucumber, onion, basil, salt and pepper. Set aside.
Combine corn and lettuce in a large bowl; toss well. Add tomato mixture and toss gently to coat. Divide evenly among 4 serving plates and top each with lobster.
