Ingredients

  • 2 T butter
  • 2 T olive oil
  • 1 celery rib, coarsely chopped
  • 1 med. onion, coarsely chopped
  • 2 cloves coarsely chopped garlic
  • 1 C white wine
  • 6 C chicken broth
  • 2 C water
  • 4 lbs peeled, seeded fresh pumpkin, cut in 1" cubes
  • Salt & pepper
  • Large pinch nutmeg
  • Salted, roasted pumpkin seeds, honey, diced cucumber for garnish

Preparation

Step 1

In large pot, melt butter with olive oil. Add onion, celery & garlic & cook over mod heat, stirring til softened, @ 5 min. Add white wine & simmer 3 min. Add stock & water & bring to a boil. Add pumpkin, cover partially, & simmer over mod lo heat til tender, @30 min.
Working in batches, puree soup in blender. Return to pot, bring to simmer & season with salt & pepper & nutmeg. Garnish with pumpkin seeds, a drizzle of honey & cucumber.
