Butternut squash gratin

Ingredients

  • 1 2-2.5 # butternut squash peeled, seeded, and cut into 1/2" half moons
  • 1/4 C chicken broth
  • 1 T butter or margarine
  • 1/2 C panko type bread crumbs
  • 1/2 C grated parmesan cheese
  • 1 T olive oil
  • 1 t fresh thyme
  • 1/4 t salt

Preparation

Step 1

Preheat oven to 400. Grease low baking dish.

Arrange squash over lapping in prepared baking dish, sprinkle with salt.

Pour the broth over the squash and dot with butter. Cover tightly and bake for 35 minutes until soft.

In a bowl combine, bread crumbs, cheese, thyme, and oil. Sprinkle mixture over baked squash and return to oven.

Bake an additional 15 minutes or until crumbs are golden brown.
