Banana Zucchini Muffins

Ingredients

  • 1/3 c. shortening
  • 1/2 c. sugar
  • 2 eggs
  • 1 3/4 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 ripe bananas, mashed
  • 1 c. grated zucchini
  • 1/2 c. chopped walnuts (optional)

Preparation

Step 1

Preheat oven at 350 degrees. Cream together shortening and sugar. Add eggs and beat well. Sift together dry ingredients; add to creamed mixture alternating with bananas and zucchini stirring well after each addition. Stir in nuts. Pour in to well greased 9x5x3" loaf pan or muffin pan. Bake for 45 to 50 minutes for loaf or 30 to 35 minutes for muffins. Let cool on wire rack.
