Key Lime Pound Cake

Ingredients

  • 1 C. butter
  • 1/2 c. shortening
  • 3 c. sugar
  • 6 eggs
  • 3 c. flour
  • 1/2 t. baking powder
  • 1/8 t. salt
  • 1 c. milk
  • 1 t. vanilla
  • 1 t. lime zest
  • 1/4 c. fresh Key lime juice

Preparation

Step 1

Preheat oven to 325. Beat butter and shortening at medium speed. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, beating just until blended.
2. Stir together flour, baking powder, and salt. Add to butter mixture alternately with milk. Stir in vanilla, lime zest and lime juice. Pour into greased tube pan and bake 1 hour and 15 minutes until pick comes out clean.

Serve with Key Lime Glaze
Lime Glaze
Whisk togethe 1 cup powdered sugar, 2 Tbsp. fresh Key lime juice and 1/2 tsp. vanilla extract until smooth. Use immediately.
