Summer Pizza Salad For Your Bumper Crop Tomatoes

Ingredients

  • 6 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic clove, minced
  • 1 teaspoon minced fresh basil
  • salt, to taste
  • freshly ground black pepper, to taste
  • 6 cups salad greens
  • 1/2 cup halved cherry tomatoes
  • 1/4 pound sliced fresh mozzarella
  • 1/4 cup sliced black olives
  • 1/4 cup sliced pepperoni
  • 1/4 cup chopped fresh basil
  • 1 tablespoon minced fresh oregano.

Preparation

Step 1

Whisk olive oil, balsamic vinegar, garlic, and minced basil; add salt and pepper. Toss with salad greens, cherry tomatoes, mozzarella, black olives, pepperoni, chopped basil, and oregano.
