Swordfish Crusted Sandwich

Ingredients

  • BATTER
  • 4 large eggs
  • 3/8 cups finely grated parmasean cheese
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup fresh parsley chopped
  • FISH
  • Oil, for frying
  • 3 (6 ounce) pieces swordfish
  • Flour, for dusting the fish
  • 3 cups crushed potato chips
  • ASSEMBLY
  • 3 fresh rolls
  • Thinly sliced onion
  • Thinly sliced tomato
  • Lettuce
  • Tartar sauce
  • Lemon wedges

Preparation

Step 1

1. Whisk batter ingredients together in a bowl.

2. Heat 4 inches of oil in a heavy bottom pot.

3. Flour in one dish, crushed chips in another.

4. Fish into flour, then batter, then chips.

5. Drop into oil and cook until fish floats (3-4 minutes).

6. Drain on paper towel, then assemble.
