Ingredients
- 4 large leeks
- 2 T. butter
- 1 c. chicken broth
- 1 c. cream (or evaporated milk)
- 1/2 t. salt
- 1/4 t. pepper
- shredded white cheddar cheese
Preparation
Step 1
1. Slice leeks into 1/2" rounds (white and light green parts only).
2. Saute leeks in butter until wilted.
3. Add chicken broth and boil til reduced by half.
4. Add cream or milk, salt and pepper.
5. Cook until desired thickness is reached.
6. Top with shredded cheese (preferably white cheddar) and bake in 375 degree oven til bubbly and starting to brown.
