Ingredients
- Peach Tarts Pastry
- 4 T. sugar plus 3 more T.
- 4 T. cornstarch
- 2 c. fresh peaches (2 to 3 med.), pureed
- 3/4 c. pecans, chopped
- 1 T. butter
Preparation
Step 1
Combine the 4 tablespoons sugar and the cornstarch. Add the 3 tablespoons sugar to the pureed peaches and gradually add the peaches to the sugar and cornstarch. Bring the mixture to a boil over medium heat, stirring constantly. Add the pecans and cook until the mixture has thickened, about 5 minutes. Remove from the heat and stir in the butter. Cool slightly and spoon into the tarts.
