Butter Lettuce & Tarragon Salad

Ingredients
- 2 small heads of butter lettuce separated into leaves
- 2 tbsp of minced fresh tarragon
- 1 tbsp minced fresh chives
- 1 tbsp red wine vinegar
- 1 tbsp Dijon mustard
- salt
- 1/4 cup olive oil
Preparation
Step 1
1. Use only the most tender leaves, tear the large leaves into pieces and arrange in a salad bowl. Sprinkle tarragon and chives onto leaves.
2. In a small bowl, stir together vinegar, mustard and salt to taste, until well mixed. Add oil and whisk vigorously until combined. Pour dressing over lettuce, toss and serve.
This salad is a nice side dish to fish or meat. If served with fish, substitute lemon juice for the vinegar.
Slices of hardboiled eggs are an attractive garnish.
Minced basil and/or Italian parsley can be added to the dressing as well.
