Bacon and Parmesan Egg Cups

  • 9 slices pre-cooked bacon
  • 6 whole eggs
  • salt and pepper
  • 2 tbsps. grated parmesan cheese
  • 1/2 tbsp. chopped parsley

Preparation

Step 1

Preheat oven to 300 degrees. Spray 6 muffin tins with cooking spray. Line each cup with 1 1/2 bacon slices-1 around the sides and 1/2 across the bottom. Crack an egg into each cup and top with salt and pepper. Bake 15-25 minutes or until the egg is cooked to your liking. Remove from oven and top with parmesan cheese and parsley.
