Ingredients
- Topping:
- 4 C. apples, chopped (McIntosh)
- 4 large eggs, beaten
- 1 C. vegetable oil
- 2 tsp. pure vanilla extract
- 1 tsp. pure almond extract
- 2 tsp. baking soda
- 2 tsp. salt
- 2 tsp. cinnamon
- 3 C. all-purpose flour
- 2 C. sugar
- 3/4 ¾ C. all-purpose flour
- 1/4 ¼ C. sugar
- 2 tsp. cinnamon
- 6 Tbsp. butter, room temperature
Preparation
Step 1
Chop apples into 1 inch chunks. In a large bowl, beat eggs until fluffy. Add oil and beat until combined. Add vanilla, almond, baking soda, slat and cinnamon and beat. Add flour and sugar. Mix on low just to blend. Turn the mixer to high and beat until smooth. The batter will be very thick. Fold in the apples, mixing by hand. Divide mixture between 2 lightly greased 9 x 5 bread loaf pans. For topping, combine flour, sugar and cinnamon in a small bowl. Cut the butter in to the mixture with a fork until all ingredients are moist and crumbly. Sprinkle equal amounts of topping on each loaf. Bake for about 1 hour on the center rack. Bake approximately 1 hour at 350 degrees.
