Apple Brandy Chicken

Ingredients

  • 4 boneless / skinless chicken breasts
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • 1/4 ¼ cup brandy
  • 1/2 ½ cup apple juice
  • 1 cup cream
  • 1 onion, chopped
  • 2 cups mushrooms, sliced
  • 3 apples, chopped (Golden Delicious)

Preparation

Step 1

Saute garlic in oil, than add chicken. Add and brown chicken. Add brandy and flambé. Add apple juice, onions and mushrooms. Simmer 15 minutes on both sides. Place chicken in casserole with onions, mushrooms and apples over chicken. Cover and place in oven at 300, for 15 minutes. Meanwhile, simmer sauce to syrup, than add cream.
