Plum Crumb cake

Ingredients

  • Topping:
  • 1/4 c margarine
  • 3/4 c sugar
  • 2 egg yolks
  • 1 &1/2 c flour
  • 1 t baking powder
  • 1/2 c milk
  • 2 egg whites beaten till stiff.
  • Plums cut in half with pits removed
  • 1/2 c sugar
  • 2 T margarine
  • 1/4 c flour

Preparation

Step 1

cream together margarine, sugar and egg yolks. Set aside.
Sift together flour and baking powder in separate bowl.
Mix creamed mixture with flour mixture and milk alternately.
Beat egg whites till stiff and fold into batter. Pour into pan., Top with halved plums with the inside down.
Topping:
blend together with fork brown sugar, margarine and flour make crumbs. Sprinkle crumb topping over plums.
Bake 350 for 40 minutes. Crumbs should be nice and brown.
