Sausage & Peppers

Ingredients

  • Peppers:
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, thinly sliced or chopped
  • 1 large red onion, cut into 2 inch chunks
  • 2 medium red bell peppers, cored, seeded and cut into 2 inch chunks
  • 2 medium green peppers, cored, seeded and cut into 2 inch chunks
  • 4 hot Italian sausages
  • 4 sweet Italian sausages
  • 1 cup crushed canned Italian plum tomatoes
  • 1 1/2 cups dry red wine
  • Pinch of dried oregano
  • Salt and pepper to taste

Preparation

Step 1

1. Heat olive oil over medium high heat in a large skillet.

2. Add the garlic, onion, and peppers. Cook and stir until onion is translucent.

3. Add the sausages and cook until they begin to brown.

4. Add the tomatoes, wine, oregano, and salt. Stir and cover. Simmer gently for about 25 minutes until the peppers are very soft.

5. Season with salt and pepper to taste.

Serve immediately with either rice, pasta, mashed potatoes, or just French bread.
