LEMON PIE FILLING - Kathy Little

Ingredients

  • 1 ) 1 3/4 cups sugar
  • 2 ) 4 1/2 tablespoons cornstarch
  • 3 ) 2 1/4 cups water
  • 4 ) 3/4 cup lemon juice
  • 5 ) 1 1/2 teaspoons grated lemon rind
  • 6 ) 4 egg yolks
  • 7 ) 1/4 teaspoon salt
  • 8 ) 1 9" baked pie crust

Preparation

Step 1

In medium saucepan, whisk together sugar, cornstarch and salt. Stir in water and lemon juice and zest. Whisk egg yolks in lemon mixture. cook over medium to low heat stirring constantly. Cook until thick. Pour into baked pie crust.
