Ravioli Sausage Filling

Ingredients

  • 4 oz bulk Italian sausage
  • 3/4 c packed spinach leaves
  • 1 egg yolk, lightly beaten
  • 1/3 c ricotta cheese
  • 1 tsp snipped fresh sage
  • 1/8 tsp grated whole nutmeg

Preparation

Step 1

In skillet, cook sausage over med-high heat until brown, using spoon to break up sausage as it cooks. Stir in spinach; cook and stir until wilted. Drain off fat. If mixture is too corse to stuff ravioli, transfer to a food processor; cover and process with several on/off puklses until chopped. In bowl, combine egg yolk, ricotta cheese, sage and nutmeg. Stir in sausage mixture. Cover; chill until needed. Makes 1 cup filling.
