Date Nut Bread

Ingredients

  • 1 1/2 cups dates, pitted and chopped
  • 2 1/4 cups boiling water
  • 3 tsps baking soda
  • 1 cup chopped nuts
  • 2 cups sugar
  • 3 Tblsps butter
  • 2 eggs, beaten
  • 1 tsp salt
  • 4 1/2 cups flour
  • 1 tsp vanilla

Preparation

Step 1

Combine baking soda with boiling water. Soak the dates in the water and baking soda solution for 30 minutes. Cream butter and sugar together. Add eggs, vanilla, dates, nuts, flour, and salt. Divide batter equally between two 9x5 greased loaf pans and bake at 300 degrees for 1 hour. Can be frozen when cool.
