Carrot Cake

Ingredients

  • Cake Mixture
  • 3 cups flour
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 eggs
  • 2 cups sugar
  • 1 1/2 cup vegetable oil
  • 1 tsp vanilla
  • 1 cup crushed and drained pineapple
  • 2 cups shredded carrots
  • 1 cup chopped nuts
  • 1 tablespoon vinegar
  • Frosting
  • 5 tablespoons flour
  • 1 cup milk
  • 1 cup sugar
  • 1 cup butter softened
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven to 350 degrees.

Mix together the flour, baking powder, 1 tsp of the baking soda, salt, cinnamon, eggs, sugar, oil, and vanilla until smooth. Add the pineapple, carrots, and nuts and mix until distributed. In separate bowl, mix the vinegar with 1 tsp of baking soda. Add to the cake mixture and mix until distributed. Grease and flour the cake pans. Pour mixture into pans and bake for 30 - 35 minutes.

Frosting mixture:

Heat the flour and milk over medium heat stirring constantly until it thickens. Do not burn. Let cool. Cream butter, sugar and vanilla until smooth. Combine the flour mixture with the creamed butter mixture and beat until stiff like cream.

Let cakes cool and frost.
