Balsamic Tomato Soup

Ingredients

  • 1/4 cup olive oil
  • 2 medium onions, choped
  • 1/2 cup red wine or sherry
  • 2 Tbsps balsamic vinegar
  • 1 Tbsp honey or sugar
  • 2 x28 oz cans diced tomatoes
  • 1 x10 oz can tomato juice
  • pinch of crushed red peppers
  • salt and black pepper to taste

Preparation

Step 1

Heat oil. Add onions and saute. Add remaining ingredients. Simmer for 20 minutes, uncovered. Puree and adjust seasonings if desired.

Serve warm.
