Pumpkin Cake

This cake can be baked in 2 9x13 inch pans or 1 large slab cake pan.

Ingredients

  • CAKE
  • 2 cups white sugar
  • 1 cup oil
  • 4 eggs
  • 2 cups plain pumpkin
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • CREAM CHEESE ICING
  • 4 oz cream cheese
  • 2 cups icing sugar
  • 6 Tbsp butter or margarine
  • 1 tsp vanilla

Preparation

Step 1

CAKE

Preheat over to 350 F.

Mix all dry ingredients together. Mix the wet ingredients together, then combine the wet and dry until well blended.

Divide mixture into well greased baking pans and bake for about 20 minutes or until a toothpick inserted in the middle, comes out clean.

ICING

Beat all ingredients together until creamy. When the cake(s) has cooled enough, spread the icing evenly over the tops and sides.
