Chicken Noodle Soup

Ingredients

  • 4 tbl plive oil
  • 1 roasted chicken cut into bite size pieces (white and dark meat)
  • 1 onion chopped
  • 1 lg carrot chopped into very small pieces
  • 2 celery stalks cut into very small pieces
  • 2 pkg organic chicken broth or 8 cups homemade broth
  • 1/4 tsp pepper
  • 1 tbl salt
  • 1 cup short pasta (rotini or tubes)
  • parmesan to taste
  • 1 tbl butter
  • 2 bay leaves
  • 4 cloves of chopped garlic
  • 1/2 cup fresh chopped parsley

Preparation

Step 1

Heat olive oil and butter in pan over med-high heat
Add carrot and celery until softened (10 minutes)
Add onion until softened (5 minutes)
Add 4 garlic cloves and cook 4 minutes
Add 2 bay leaves

Add all broth
(Can add boiling water to increase amount of soup if you like)

Bring to full boil and cook all for 5 minutes

Add pasta and cook for 6 minutes

Stir in as much chicken as you like and continue to cook for 3 - 5 minutes longer

Can stir in fresh chopped parsley just before serving to increase medicinal value of soup

Serve with drizzle of olive oil and parmesan to taste
