BANANA COFFEE CAKE

Ingredients

  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/2 c. butter
  • 1 1/4 c. sugar
  • 2 eggs
  • 1 c. mashed ripe bananas (about 3 medium)
  • 1 tsp. vanilla extract
  • 2 1/4 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • Topping
  • 1 c. chopped pecans
  • 2 Tbs. sugar
  • 1 tsp. cinnamon

Preparation

Step 1

In a large mixing bowl, beat cream cheese, butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla.
Combine flour, baking powder and baking soda, and add gradually to the creamed mixture.
Mix topping ingredients together; add half to the batter. Pour batter into a greased 13x9x2-inch baking pan, and sprinkle with the remaining topping.
Bake at 350º for 25-30 minutes, or until a toothpick inserted in center comes out clean. Cool before serving.
