Banana Brown Rice Pudding

Ingredients

  • 1 cup cooked brown rice
  • 1 cup fat free milk
  • Pinch of salt
  • 1 ripe banana, mashed
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/8 tsp almond extract

Preparation

Step 1

Combine rice, milk, and salt in medium saucepan; bring to a boil. Reduce the heat and simmer uncovered, stirring occasionally, until slightly thickened, about 15 minutes. Let the mixture cool to room temperature about 30 minutes.

Stir in the banana, vanilla, cinnamon, and almond extract.
