Ingredients
- 4 chicken sausage links, sliced
- (I like Open Nature brand)
- ½ red onion, sliced
- 2 cloves minced garlic
- 2 yellow squash cut into small slices
- 2 zucchini cut into small slices
- ½ cup cherry tomatoes cut in half
- Salt and pepper to taste
- Veggie Bombay (or other vegg-all) to taste
- 2 T. olive oil
Preparation
Step 1
Saute onions in olive oil for about 1 minute. Add all other veggies (except tomatoes) and cook about 2 minutes. Add sausage and cook until it browns and veggies just begin to soften. Add tomatoes and toss to heat.
You can also add eggs to leftovers for a great breakfast the next day.
