Ingredients

  • 4 chicken sausage links, sliced
  • (I like Open Nature brand)
  • ½ red onion, sliced
  • 2 cloves minced garlic
  • 2 yellow squash cut into small slices
  • 2 zucchini cut into small slices
  • ½ cup cherry tomatoes cut in half
  • Salt and pepper to taste
  • Veggie Bombay (or other vegg-all) to taste
  • 2 T. olive oil

Preparation

Step 1

Saute onions in olive oil for about 1 minute. Add all other veggies (except tomatoes) and cook about 2 minutes. Add sausage and cook until it browns and veggies just begin to soften. Add tomatoes and toss to heat.

You can also add eggs to leftovers for a great breakfast the next day.
