Ingredients
- For Marinade and Chicken:
- 3 cloves garlic, minced
- 1 Tblsp canola oil
- 1 Tblsp sugar
- 1 Tblsp chopped rosemary
- 2 tsps thyme
- 2 tsps grated lemon rind
- 1/4 tsp pepper
- 1/2 tsp salt
- 4 boneless chicken breasts
- For Basting Sauce:
- 1/2 cup lemon juice
- 2 Tblsp olive oil
- 1 Tblsp red wine vinegar
- 2 tsps honey mustard
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
Step 1
To prepare marinade, combine garlic, oil, sugar, rosemary, thyme, lemon rind, pepper, and salt in a large bowl. Add chicken and toss until chicken is well coated; cover and refrigerate overnight or up to 24 hours. To prepare basting sauce, combine lemon juice, olive oil, vinegar, honey mustard, salt, and pepper in medium bowl; whisk. Grill chicken 16 minutes, turning once. Baste chicken with lemon juice mixture. Grill 8 more minutes, turning and basting twice until a meat thermometer inserted into chicken registers 165 degrees. Discard extra marinade and basting sauce.
