Chicken Lettuce Wraps

Ingredients

  • 2-3 lb. thin cut chicken breasts or chicken tenders, chopped into bite-sized pieces
  • 1/4 cup vegetable or peanut oil
  • Coarse salt and pepper to taste
  • 6 cloves garlic, chopped
  • 1 inch ginger root, finely chopped or grated
  • zest of 2 oranges
  • 1 red pepper, diced small
  • finely diced carrots (opt.)
  • 12-16 oz. sliced water chestnuts, drained and chopped
  • 6 scallions, chopped
  • 1/3 cup hoisin sauce
  • 1 large head iceberg lettuce

Preparation

Step 1

Preheat large skillet to high. Add oil to hot pan. Add chicken and sear by stir-frying a minute or two. Reduce heat slightly and add salt, pepper, garlic and ginger and cook a minute more. Grate zest into pan, and add bell pepper, water chestnuts, and scallions. Cook another minute, continuing to stir-fry mixture. Add hoisin and toss to coat mixture evenly.
Transfer hot chicken to serving platter and pile lettuce alongside. Garnish with oranges. Pile spoonfuls of chicken mixture into lettuce leaves, wrapping lettuce around filling.
