Pineapple Zucchini Loaf

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 2 cups zucchini
  • 3 cups flour
  • 1 tsp salt
  • 1 ½ tsp cinnamon
  • 1 cup walnuts
  • 1 cup oil
  • 2 tsp vanilla
  • 8 oz crushed pineapple
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ¾ tsp nutmeg
  • 1 cup raisins

Preparation

Step 1

Beat egg. Add sugar, oil and vanilla and beat until thick and foamy. Stir in the zucchini and pineapple.
Mix the dry ingredients together. Stir in gently, the zucchini mixture until blended.
Bake at 350 degrees for 1 hour.
Dust with powdered sugar.
