Penne alla Vodka

Ingredients

  • 1 box (14.5oz) penne (ronzoni smart taste)
  • 1/2 C frozen peas
  • 1 1/2 tsp olive oil
  • 1/3 C chopped shallots
  • 1/4 C vodka
  • 2 C marinara sauce
  • 4 oz fat-free cream cheese, broken into chunks

Preparation

Step 1

Cook pasta in large pot as box directs. Add peas just before draining pasta.
Meanwhile, heat olive oil in a med saucepan. Add shallots; cover and cook over med heat 3 min.
Add vodka; boil until evaporated, about 2 min. Stir in marinara sauce; simmer 2 min to blend flavors.
Stir in cream cheese and cook, stirring until melted.
Drain pasta and peas. Return to pot; add sauce and gently toss to combine.
