Ingredients
- 10 roma tomatoes, diced small
- 1/2 red onion, diced small
- 1/3 c fresh basil, minced
- 3 T fresh squeezed lemon juice
- 2 T red wine vinegar
- 3 garlic cloves, minced
- 3 T extra virgin olive oil
- salt
- 12 thick slices rustic bread
- 1/2 c roasted garlic grapeseed oil
Preparation
Step 1
Mix together and serve on grilled croutons.
Croutons:
Preheat stovetop grill over a moderate heat. Brush a light coating of oil over each side of the bread and grill for approximately 1 minute per side.
