Cajun Catfish

Ingredients

  • 1/4 cup dry bread crumbs
  • 1 teaspoon minced garlic
  • 1/2 teaspoon crushed red-pepper flakes
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 4 catfish fillets (6 ounces each)

Preparation

Step 1

1. In a small bowl, combine the bread crumbs, garlic, red-pepper flakes, chili powder, and cumin. Mix well.
2. Preheat the broiler.
3. Coat the broiler pan with no-stick spray.
4. Place the catfish on the pan.
5. Sprinkle with half of the breadcrumb mixture.
6. Broil 4" from the heat for 5 minutes, or until golden brown.
7. Turn carefully and sprinkle with the remaining bread-crumb mixture.
8. Broil for 2 minutes, or until the fish is opaque in the center. (Check by inserting the tip of a sharp knife into the center of 1 fillet.)
