Cranberry Corn Salsa

Ingredients

  • 2 T vegetable oil
  • 1 chopped green pepper
  • 1/2 chopped medium onion
  • 1 bag chopped cranberries
  • 1&1/2 c 5% vinegar
  • 2 c sugar
  • 2 t red pepper flakes
  • 2 T ginger
  • 2 cans corn

Preparation

Step 1

Add all ingredients to a pot. Cook, stirring constantly till mixture has thickened.
Add mixture to preserving jars.
Wipe rims. Seal.
