Crab Stuffed Pablano Chilis

Ingredients

  • 6 large poblano peppers (tops cut off and seeded)
  • 16 oz crab meat
  • 2 diced and seeded roma tomatoes
  • 1 large fire roasted red pepper
  • 4 large green chilis roasted, peeled and chopped (or 1/2 can)
  • 1/4 cup fat free or light shredded cheese
  • 2 T. fat free or light mayo
  • 2 T. spicy mustard
  • 1 T. garlic powder
  • 1 T. cumin
  • 1/4 t. cayenne pepper
  • juice of one lemon
  • salt and pepper

Preparation

Step 1

Mix all ingredients and stuff the poblano peppers. Place on baking sheet. Cook at 375 F for 35 minutes. Then place oven on high broil and cook 10 minutes longer until the peppers blister (watching that they don't burn).
