Ingredients
- 6 large poblano peppers (tops cut off and seeded)
- 16 oz crab meat
- 2 diced and seeded roma tomatoes
- 1 large fire roasted red pepper
- 4 large green chilis roasted, peeled and chopped (or 1/2 can)
- 1/4 cup fat free or light shredded cheese
- 2 T. fat free or light mayo
- 2 T. spicy mustard
- 1 T. garlic powder
- 1 T. cumin
- 1/4 t. cayenne pepper
- juice of one lemon
- salt and pepper
Preparation
Step 1
Mix all ingredients and stuff the poblano peppers. Place on baking sheet. Cook at 375 F for 35 minutes. Then place oven on high broil and cook 10 minutes longer until the peppers blister (watching that they don't burn).
