Grilled Salmon with Avacado Herb Sauce

Ingredients

  • Sauce:
  • 6 salmon steaks
  • 2 Tbsp melted butter
  • 1 cup whipping cream
  • 1 ripe avocado, peeled and pitted
  • ¼ cup chopped red onion
  • 2 Tbsp each fresh mint and parsley
  • 2 Tbsp lemon juice
  • 1 Tbsp fresh coriander
  • ½ tsp each ground cumin and Tabasco sauce
  • ½ tsp each salt and pepper
  • 1 clove garlic

Preparation

Step 1

Sauce: Measure all ingredients into a blender. Blend until smooth. Season to taste. Refrigerate for at least two hours for flavours to blend. Reserve 1 ½ cups and use remaining sauce to brush on salmon steaks during cooking. Brush salmon steaks with butter. Preheat grill to medium. Place salmon steaks on grill. Cook 4-5 minutes per side, brushing cooked sides with sauce. Serve salmon steaks immediately with reserved sauce.
