Creamed Spinach

Ingredients

  • 4 pounds fresh spinach, steamed
  • 1/4 cup butter
  • 1 1/2 T all purpose flour
  • 2 cups heavy whipping cream
  • 1 (9 oz) pkg fontina cheese, shredded
  • 1 (8 oz) pkg cream cheese, softened
  • 1 t. salt
  • 1/2 t. ground red pepper

Preparation

Step 1

Drain spinach well, squeezing out excess water. Place spinach in a large bowl, set aside

In a large skillet, melt butter over medium heat. Add flour; cook, stirring constantly for 2 minutes. Gradually stir in cream, bring to a boil, reduce heat, and simmer for 4 minutes, stirring constantly or until thickened. Add cheeses, salt, and red pepper. Stir until cheese are melted and smooth. Pour cheese mixture over spinach, stirring to combine. Serve immediately.
