Ingredients
- 4 eggs (or 2 eggs and 4 egg whites)
- 1 Tbs cornstarch
- 1 Tbs capers, drained
- 6 pitted black olives, sliced
- 1 Tbs chopped fresh parsley
- 1 tsp butter
- 1/2 C chopped onion
- 3/4 C chopped red pepper
- 1 1/2 C cooked mac (or other small pasta)
- 2 med tomatoes, seeded and chopped
- 2 Tbs chopped fresh basil
Preparation
Step 1
Heat broiler. Beat eggs and cornstarch in a bowl. Stir in capers, olives and parsley and set aside. Heat butter in a 10" ovenproof skiller over med heat. Saute onion and pepper until softened. Add mac;season with salt and pepper. Stir until heated about 1 min. Pour egg mixture evenly into skillet. cover and cook 5-7 minutes over low heat. Place skillet uncovered under broiler until top of frittata is slightly browned 2-3 minutes. Cut into 4 wedges then top with tomatoes and basil. Serve immmediately.
