Ingredients
- 1 teaspoon olive oil
- ½ sweet onion, diced
- 2 stalks of celery, diced
- 2 carrots, diced
- 8 cups chicken stock
- 2 cups cooked chicken, diced
- 2 bay leaves
- sea salt
- 5-6 fresh basil leaves, chopped
- 1 cup dried orzo pasta
Preparation
Step 1
1. Heat olive oil over medium-high heat. Add onion and stir for 1-2 minutes. Add carrots, celery, and garlic, then stir for a minute. Stir in chicken stock, diced chicken, and bay leaves. Season with salt and pepper. Let simmer for an hour.
2. Raise heat to medium-high and bring to a boil. Add basil and dried pasta and cook by pasta instructions for al dente. Taste and re-season to taste. Serve warm.
