Crunchy Topped French Rhubarb Pie

Ingredients

  • Filling:
  • 1 egg
  • 1 c sugar
  • 1 t vanilla
  • 2 c fresh rhubarb, cut into small pieces(do not use the leafy tops)
  • 1/2 c strawberries, cut up
  • Topping:
  • 1 c quick cooking oatmeal
  • 1/3 c brown sugar
  • 1/3 c butter, softened
  • 1/3 c chopped nuts
  • 1/2 t cinnamon

Preparation

Step 1

Mix the filling ingredients together and pour into an unbaked pie shell
Mix the topping ingredients together and sprinkle over filling

Bake in a preheated oven at 400' for 10 min, then lower oven temperature to 350' for an additional 30 min or more until well done
