Spicy Black Beans

Ingredients

  • 1/2 cup water
  • 1/4 - 1/2 tsp. crushed red pepper
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1 (15 oz.) can black beans, untrained
  • 1 dried ancho chili, seeded
  • 1/2 tsp. butter
  • cooking spray
  • 2/3 cup chopped onion
  • 1 garlic clove, minced
  • 1/3 cup thinly sliced green onions

Preparation

Step 1

Combine first six ingredients in a medium saucepan, bring to a boil. Reduce heat and simmer 15 minutes. Discard ancho. Melt the butter in a large nonstick skillet coated with cooking spray over medium high heat. Add the chopped onion and garlic, sauté 5 minutes or until onion begins to brown. Add onion mixture to bean mixture. Stir in green onions.
