Mango Cake

  • 4 mangoes, cut into 1/2 inch cubes
  • 2/3 cup plus 2 Tbsp. sugar
  • 2 Tbsp. lemon juice
  • 1/2 tsp. ground ginger
  • 1 1/2 cups flour
  • 3/4 cup macadamia nuts, finely ground
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 stick unsalted butter, chilled and cut into cubes
  • 2 eggs

Preparation

Step 1

Preheat oven to 375.

In a saucepan, combine half of the mangoes, 2 Tbsp. sugar, lemon juice and ginger and cook over medium heat until jamlike, 15 minutes. Remove from heat and stir in remaining mangoes. Pour into a square baking dish.

Combine rest of sugar, flour, nuts, baking powder and salt. Mix in butter at medium low speed until the mixture is like coarse sand. Beat in eggs until just combined. Drop the dough over the mango mixture to cover evenly. Sprinkle with sugar and bake for 30 minutes, or until golden.
